Many ranches sell beef based on hanging weight and then have customers pay the butcher separately for processing. While that's a common approach, it can make it difficult to know exactly what you'll owe until the animal is processed.
For example, a quarter beef with a hanging weight of 180 pounds might look like this:
Beef cost: 180 lbs (hanging weight) × $7.50/lb = $1,350
Processing fee: 180 lbs (hanging weight) × $1.25/lb = $225
Total: $1,575
In this model, you're paying two separate businesses and your final cost can vary depending on the animal's weight and processing fees.
At Mellow Marmot Ranch, we bundle everything into one simple price. Your share includes the beef, processing, cutting, wrapping, and packaging. There are no separate butcher bills and no surprises at pickup.
Our goal is simple: when you reserve a beef share, you'll know exactly what you're paying and can budget accordingly.

We offer complimentary delivery throughout Central Oregon and to Oakridge, Oregon. Hand delivery to Eugene is available for a $75 delivery fee, and delivery to the Portland Metro area is available for $100.

Our cattle are raised using rotational grazing practices, allowing them regular access to fresh pasture while supporting the long-term health of the land.
To create a more consistent and premium eating experience, our beef is grain-finished at Mellow Marmot Ranch during the final stage of production. Grain finishing helps develop the rich marbling that gives beef its tenderness, buttery texture, and deep flavor—qualities most people associate with high-quality steakhouse beef. It also creates more consistent cuts and cooking results across the entire animal.

Properly frozen and packaged beef can last 12 months or longer in a standard freezer while maintaining excellent quality. For the best flavor and texture, we recommend enjoying your beef within the first year.

Most grocery store beef passes through large-scale supply chains and may come from multiple animals, regions, or feedlots before reaching your cart. Over the last decade, many consumers have also noticed a decline in overall beef quality and consistency as the industry has prioritized efficiency, scale, and lower-cost production methods.
By purchasing locally raised beef from Mellow Marmot Ranch, you know exactly where your food comes from and who raised it. Our beef is raised with care in Central Oregon, processed locally, and sold directly to families in our community. The result is a more transparent food source, better consistency, and a stronger connection to the land and people producing your food.

Beef availability depends on processing schedules and seasonal timing. We typically aim to begin processing around November 15th each year, though exact timing can vary depending on processor availability, hanging time, and overall harvest schedules. Once an animal is scheduled, processing and dry aging generally take several weeks before the beef is packaged and ready for pickup or delivery. We’ll communicate estimated timelines throughout the process so you know what to expect.
